For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 4 packages (8 ounces each) of softened cream cheese
  • 1 and 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs, room temperature
  • 2/3 cup sour cream
  • 2/3 cup heavy cream


  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C).
  2. Prepare the Crust:
    • In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. Bake the Crust:
    • Bake the crust in the preheated oven for 10 minutes. Remove it from the oven and allow it to cool while preparing the filling.
  4. Increase Oven Temperature:
    • Increase the oven temperature to 350°F (177°C).
  5. Prepare the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese until smooth and creamy.
    • Add the sugar and vanilla extract, and continue to beat until well combined.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the sour cream and heavy cream until the batter is smooth.
  6. Pour the Filling:
    • Pour the cream cheese filling over the cooled crust in the springform pan.
  7. Bake the Cheesecake:
    • Bake in the preheated oven for 45 to 50 minutes, or until the center is set and the top is lightly browned.
  8. Cooling Process:
