Cheesecake
Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Cheesecake Filling:
- 4 packages (8 ounces each) of softened cream cheese
- 1 and 1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs, room temperature
- 2/3 cup sour cream
- 2/3 cup heavy cream
Instructions:
- Preheat the Oven:
- Preheat your oven to 325°F (163°C).
- Prepare the Crust:
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- Bake the Crust:
- Bake the crust in the preheated oven for 10 minutes. Remove it from the oven and allow it to cool while preparing the filling.
- Increase Oven Temperature:
- Increase the oven temperature to 350°F (177°C).
- Prepare the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Add the sugar and vanilla extract, and continue to beat until well combined.
- Add the eggs one at a time, beating well after each addition.
- Mix in the sour cream and heavy cream until the batter is smooth.
- Pour the Filling:
- Pour the cream cheese filling over the cooled crust in the springform pan.
- Bake the Cheesecake:
- Bake in the preheated oven for 45 to 50 minutes, or until the center is set and the top is lightly browned.
- Cooling Process:
- Allow the cheesecake to cool in the oven with the door ajar for about an hour.
- Transfer the cheesecake to the refrigerator and let it chill for at least 4 hours or overnight.
- Remove from the Pan:
- Once fully chilled, run a knife around the edges of the pan to loosen the cheesecake. Remove the sides of the springform pan.
- Serve:
- Slice and serve the cheesecake chilled. You can garnish it with fresh fruit, fruit sauce, or a dusting of powdered sugar.
